 Extravirgin olive oil NOVIS is obtained from olives harvested precociously compared to the ripening stage of olives, when still mainly green. This in order to enhance bitter and green fruity features.Perfect for bruschette, soups, grilled vegetables and boiled vegetables such as broccoli and potatoes. Its right contrast with the food it is used on, makes this oil not only a simple dressing but the "main" element instead. Its contact with a warm food right before serving enhances even more the flavour and makes higher notes milder.
