Extravirgin olive oil San Bartolomeno "Novis" is obtained from olives harvested much earlier their ripening when they are pretty much green. It enables to enhance the distinguishing feature of bitter and green fruity. Perfect for bruschette, soups, grilled vegetables and meat as well as boiled vegetables such as broccoli and potatoes. Its right contrast with the food it's used on, makes this oil not only a simply dressing but a "main" element instead. The contact with warm food before serving it exalts even more the flavourings while making higher notes milder.
